Corn Pudding

The main sweet favor from this recipes is corn.
It is important to pick the right corn and cook it properly to get the best crunchy and sweet juice of corn. On top with coconut milk to get a good combination favor at the end.

Fresh Spring Roll

Fresh Spring Roll with Peanut Sauce. I think this appetizer is the most easy and healthy for
people who love to eat fresh vegetable. The stuffing is any vegetable or meat you like - for the one I made are lettuce, green onion, carrot, cucumber, mint, vermicelli noodle and shrimp. Fresh Spring Roll can serve either with sweet sauce or peanut sauce.

Beef Salad

Salad in the US means lettuce and vegetables that is the start of the meal, but for Thai people salad - called "Larb" - can be the main dish of the meal. Most of the Thai salids have prawns, chicken, pork, or beef with the rice and side of vegetables such as cucumber. One of most popular salids is Pork Salad or " Larb Moo" in Thai, but for today I will make it with organic ground beef. The salad sauce is made with a combinations of sweet, spicy and sour ingredients and is the most popular dish for the North East Part of Thailand.

This was the reopening of my Cooking Class after recovering from falling down the stairs. The seven students were great and we had a lot of fun learning how to make Tom Yum Shrimp, Pad Thai and Mango Sticky rice. We also learned how to make the popular drink -Thai Ice Tea. It was a special night for one of the students, Eric who was celebrating his birthday, so we surprised him with a chocolate cake. After cooking we stuffed our selves with food and drink. Before we knew it 3 hours had passed, but to get everyone moving again I gave them a bit of dance lesson to get some exercise - starting slow with a Waltz then speeding up with some Cha Cha Cha and Salsa. I think I may have had even more fun than the students!
